Pollock emerged from the bench to net United's 87th minute winner at Nethermoor Park after the Pilgrims had squandered a host of earlier chances.
Guiseley grew into the contest and wasted two late chances themselves - but United deserved their eventual three-point haul as they closed the gap on the play-off positions in the process.
Manager Paul Cox had made four changes ahead of kick-off, only one of which was enforced, with Matt Tootle, Jake Wright Snr and Ntumba Massanka all starting alongside debutant Brad Nicholson.
First half chances were at a premium until Danny Elliott missed a virtual open goal in the 41st minute - rounding Guiseley's on-loan Mansfield Town keeper Owen Mason, before smacking the post rather than the back of the net.
Nicholson, making his debut against his former club, produced a brilliant goalline clearance on the stroke of half-time to deny Thierry Latty-Fairweather.
Mason made a super save to deny Shane Byrne in the 56th minute, with United's influential midfielder having found himself clean through.
Elliott saw an effort beaten aside by Mason, while Massanka was inches away from converting an Elliott cross.
Guiseley responded with substitute James Gale unable to turn the ball home from close-range, while Andy Hollins' header clipped the top of the crossbar.
United's breakthrough finally arrived three minutes from time when POLLOCK robbed Hamza Bencherif to motor through on goal and roll the ball beyond the onrushing Mason.
There was still time for Mason to excel and keep out a stoppage time James Hanson strike, but United held firm to secure maximum spoils.
